Diet Cake Recipe

Diet Cake Recipe

Dump the cake mix into a mixing bowl. Empty your diet beverage of choice in with the cake mix. Mix on high for 3-5 mins. Take your baking vessle of choice, grease it up with some non-stick spray and pour in the mix.

Bake in an oven at 350 degrees for 40-45 mins.

That's it! No eggs and no oil! Just the mix and a can of diet soda. And this works for all cake flavors! Chocolate, Vanilla, White, Rainbow, Strawberry, Spice. Add a dollop of Fat Free Cool Whip to your slice and enjoy!

Happy Easter Weekend

It's very hard to stay away from chocolate during the holiday of Easter. So, I came across of a recipe for chocolate cake that I would like to share with you all. I got it from some magazine that I don't remember when I was at the doctor's office, waiting room.

Flourless Chocolate Cake

Butter-flavored cooking spray
5 egg whites
4 oz. semisweet chocolate, chopped
3 Tbsp. unsweeeted cocoa
1/2 cup ground walnuts, almonds or hazelnuts
1/2 cup Splenda granular
1/2 cup reduced-fat sour cream
1/2 cup egg substitute
1/2 tsp. vanilla extract

Preheat oven to 350 degrees. Coat a 9-inch spring form pan with butter-flavored cooking spray. In a bowl of electric mixer, beat egg whites on high until stiff glossy peaks form. Microwave chocolate in microwave-safe bowl on high for 1 or 2 minutes. Stir until smooth.

Scrape into a mixing bowl. Stir in cocoa, nuts, Splenda granular, sour cream, egg substitute and vanilla extract. With spatula, fold in egg whites. Spoon batter into prepared pan and gently smooth top. Bake for 30 minutes and cool. Loosen edges of pan and remove cake. Cake wil deflate. Serve with scoop of low-fat ice cream or cool whip if desired.

Homemade Banana Ice Cream

Here is a simple and easy made desert with no weird ingredients.

1 Banana (it adds up to 1/2 cup)
(Optional: dark Hershey chocolate chips and vanilla wafers)

Peel the banana and slice into pieces into a zip lock bag. Then put in the freezer over night. The next day, take out of the freezer (It might look dark brown, if it was a ripe banana but don't be alarmed. You can keep the banana in the freezer for 5 to 8 days.) Let it sit out for about 5 minutes to thaw. While it is thawing, you can get out your food processer or high speed blender. Put the banana in the processor, close lid and switch ON. Let it process until the banana looks like soft ice cream, light and fluffy. You could add cinnamon, if you like. Add vanilla wafers or chocolate chips (TIP: dark chocolate had less sugar). Enjoy a cool, full-filling and health treat.
